When I was little, every couple of years, my mother and her sisters
would get together just before Christmas and make Eight Plate Fudge.
Eight Plate Fudge was a family recipe that had belonged to my mother's
mother's mother. And, you guessed it, requires eight plates. It also
requires forarms like Popeye's and a few helpers to make it through the
really difficult hours when you're sure the fudge will never be effing
finished.
While I have fond memories of that melt-in-your-mouth
chocolately goodness that resulted from all that work, my
Fudge-in-a-Hurry is thrown together in minutes and while it ain't quite
as good, chocolate and sugar are never bad.
1 cup Semi-Sweet Chocolate Chips
3 1/2 Cups Confectioner’s Sugar
1/2 Cup Dutch Process Cocoa Powder
2 Tablespoons Margarine
1/2 Cup Regular Coconut Milk
Lightly grease an 8 x 8 inch square baking pan.
In a large bowl, combine the chocolate chips, sugar,
and cocoa. Separately, place the margarine and coconut milk in a small
saucepan, and stir together over medium heat. Cook the mixture until the
margarine has melted, and bubbles just begin to break at the surface.
Remove it from the stove, and immediately pour over the chocolate
mixture. Let everything sit for a couple of minutes, and then stir
vigorously to melt the chocolate and incorporate the dry ingredients.
Continue stirring until a completely smooth mixture forms. Quickly pour
everything into your prepared pan. Let cool completely before cutting
into squares.
Makes about 30 small bites or one huge feast, if you're PMS-ing.
